Let’s Eat Some Eggs!

(Lancaster, KY - April 12, 2021) — Must be the time of year for thinking about eggs! Easter eggs, of course, then Deviled Eggs because we had eggs left over after Easter Eggs! And then there’s chocolate eggs that keep popping up on TV commercials. Hence, thinking about eggs! Eggs are a good source of protein in our diets. So let’s talk more about eggs!
Keeping plenty of eggs on hand can help you be ready to cook and bake foods with added nutrition and protein. Look for local eggs to buy from farmers in your area. Many farmers’ market vendors include eggs in their product line, or you might buy direct from the farm.
Eggs can be added to many foods beyond breakfast to increase protein and improve the structure of the food. For example, adding eggs to the cheese layer of lasagna or the stuffing in a pepper helps hold the dish together.
Quiche or a baked egg casserole makes for a satisfying breakfast, lunch, or dinner dish. You might try a skillet meal of baked tomatoes with eggs. Keep hard boiled eggs in the refrigerator to use as snacks or salad toppings. Deviled eggs are always a favorite appetizer or side dish. Egg salad makes for a tasty sandwich and it’s good on a cracker, also!
Remember to “put an egg on it” by topping your leftover rice, greens, or just about anything with a fried egg. For something different, try topping toast with sautéed mushrooms and an egg. A fried egg sandwich with a slice of fresh tomato makes a delightful summer lunch.
We now know that eating two eggs per day as part of a heart-healthy diet low in saturated fat is acceptable for most people. Those who eat less meat can consume eggs without an impact on blood cholesterol levels. Enjoy some eggs for extra protein and flavor.
